Job Responsibilities
The Dishwasher keeps dining ware, utensils, and cookware clean and sanitized. The job includes both machine and manual washing. The worker must follow safety and sanitation rules.
Machine Washing
- Operate scullery machines and equipment according to the manufacturer’s procedures and safety rules.
- Wash dining ware and utensils by machine. Make sure they are fully cleaned and sanitized.
- Check and record the operating temperature of every washing cycle. Follow the sanitation standards in Section 5, Appendix K of NAVSUP P-486.
- Keep accurate temperature logs for all washing cycles. Provide the logs when the Government or Food Service Officer asks for them.
- Review temperature logs with the Food Service Officer when needed.
- Keep the washing process organized. Make sure there are enough dining ware and utensils during meal periods.
Manual Washing
- Wash cookware, utensils, and other kitchen tools by hand. Make sure they are clean and sanitized.
- Store all clean and sanitized items in their correct places. Keep the kitchen organized.
- Follow all safety procedures and sanitation standards.
- Keep scullery machines and washing equipment clean and working properly.
Performance Standards
- Follow NAVSUP sanitation and temperature guidelines, including Section F of the contract agreement.
- Keep all scullery logs, sanitation records, and cleaning processes accurate and up to date. Make them available for review when requested.
- Handle no more than five validated customer complaints per month about the cleanliness of dining ware and utensils.
- Support kitchen staff. Prevent shortages of clean dining ware and help keep meal service running smoothly.
Minimum Requirements
- High school diploma or equivalent.
- At least 1–2 years of experience in food service or sanitation. Experience must include machine and manual washing processes.
- Knowledge of food safety and sanitation standards. This includes proper handling and cleaning methods.
- Good attention to detail, organization, and time management skills. These skills are needed to keep clean dining ware available during all meal periods.
- Ability to follow operating procedures and safety rules for scullery machines and other equipment.
- Must be able to obtain and maintain facility credentials or authorization.
- Employees must read, speak, and understand English well enough to perform the contract requirements and follow installation emergency procedures.
- Passport must be valid for at least one year at the time of hiring.
- Ability to obtain country-specific visas under the U.S. Department of State Foreign Clearance Guide.
- Ability to pass contract medical requirements and remain compliant during the deployment.
Preferred Qualifications
- Previous experience in an austere OCONUS (Outside the Continental United States) environment with a multi-national workforce.
- Valid country driver’s license.
- Country visa, when required under the U.S. Department of State Foreign Clearance Guide.
- Familiarity with NAVSUP P-486 requirements or similar military food service and sanitation standards.
- Experience keeping temperature logs and following Government food safety guidelines.

The job may require long periods of sitting, standing, walking, and climbing stairs. Employees may need to lift up to 25 pounds regularly and 50 pounds occasionally.
